Here is why:

One of the dialogue options from Death told us how Zaros would "die" when he was mortal. For Zaros it said he would feel "burning as hot as a star, and then a giant blackness". This is the hint.

This statement goes to something Jas said at the end. Jas said no matter how bright the flame Zaros can never burn as hot as a star. I guess Death proved this statement untrue. This leads me to believe he will become an elder god, if only for a little while.

What do you guys think?

The line wasn't that Zaros couldn't burn as hot as a star, it was "No matter how hot a flame burns, it will never be a star".

Which is true. You could make a fire as large and as hot as a star, but it wouldn't be a star even then, because a star is more than just a giant burning flame.

I'm thinking Jas wasn't the only one to lay an egg.

He can certainly continue his goal, and there are at least 4 more chances.

I wonder what he's gone looking for though?

(I haven't finished the quest, so I apologize if I'm missing details here)

I know that Bik art was just a concept, but perhaps Zaros will actually appear in that quest? Or perhaps he'll try to do more with the Core of Mah.
there's a few more eggs he could potentially use laying around somewhere.

Uh, no. The Stone of Jas is not some random egg laid by an Elder God, it was specifically created by Jas as a catalyst to assist in the goals of the Elder Gods. If there were more of them just sitting around somewhere, Jas would have mentioned them when asked about where ALL of the elder artifacts are (since if another elder god made a stone like Jas, it would be an artifact).

There is no "Stone of Bik" or anything like that. The Stone of Jas was the only catalyst they needed.
